The Bikini Cocktail

Yields 10 servings

For the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Premix (yields 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Method

For the Citrus Syrup: Combine all the ingredients into a pan, bring to a simmer, mixing so the sugar melts. After that, remove from the stove and let it to cool fully. Decant into an sealable bottle, cap it and store in the fridge, it will last for around a month.

For the Batch Mix: Pour every spirits and syrup into a large bottle, allow it to infuse for an hour, then strain best through a fine cloth, to ensure it's perfectly clear.

To serve: Measure 85ml of your batch mix to a cocktail shaker containing ice, and agitate carefully for a minute until cold. Filter into a frosted cocktail glass or equivalent, top with some cranberries adding the final touch using a brief mist of mandarin oil above the glass.
